Lunch today!

Wilco and I went to the market today, as we do most Wednesday’s.
Some of the yummy food we bought were: Blueberries, goat’s cheese, golden beetroots and delicious marinated pork ribs (from Pedlar).
A quick go on the merry-go-round and a play at the park and off home we went for sleeps and lunch!

For lunch today I cooked:
Marinated pork ribs with golden beetroot and goats cheese salad.

If only max was fed like this everyday!
First I heated my oven at 180c
In a hot skillet with a dash of olive oil, seal the ribs till they were a little caramelised (about 5 min).

Then I put them in an ovenproof shallow dish with a splash of water and covered with foil. And popped them into the oven.

Next clean your beets and remove any yucky bits, then cut them in half and place on a baking sheet and season with salt and pepper and a drizzle of oil.

Place in the oven and cook till they begin to get golden (around 15 min), then cover with foil, lower the heat on the oven to 160c and cook for a further 30 – 40 min (check after 30 to see if you can insert a knife in with ease). Once they are cooked remove the foil from the beets and the ribs and give them a further 10 - 15min.

While your waiting for them to finish, prepare your salad. Wash a handful of mint and cut up a tomato into skinny wedges (see photo) have your goats cheese ready to crumble.

Remove your beets from the oven first, cut them in half and pop them on a plate with the tomato wedges a drizzle of good olive oil and a drop or two of balsamic, salt, pepper, the goats cheese and mint, and mix together.

Get your delicious ribs out of the oven and serve them with beetroot salad and a wedge of lime. 
Best lunch for a long time!

Before we tucked into lunch we had a snack of leg ham (again from pedlar) wrapped around a wedge of tomato and a slice of camembert. (The only thing missing was a basil leaf)!
